It's kind of like digital art but you're drawing or painting in a 3d space. 3D models are usually used for making game-ready objects, animated series, commercial use, and more. 3D games and animation in general, are the most popular to use 3d assets. Softwares such as Blender is also the most popular choice to use for making 3d models, animations and more since it is free to use and open source due to free or paid plugins like Toon Shaders can be used in Blender for easy access instead of making your own by scratch.
You can use 3d models however you want as long as it's for personal use. People also hire others to make 3d models of characters, objects, or just texture paint or rig and animate stuff. Vrchat and Game development are the best examples of people hiring 3d modelers. Without 3d modelers, the games and other stuff including animations and movies would just be 2d. Sometimes 3d modeling is not for everyone as it is ok to not have that skill as it's like a hobby for people unless they really want to learn it to be hired for a job. 3d modelers are also very careful with making models as too much vertices will crash computers.
